ABOUT

My name is Matthew. I live in Arlington Heights with my lovely wife, Deena, and our two dogs. One of my most prized possessions is my chef's knife. I am a bit particular about who uses it and how it is treated. It's my most important kitchen implement.

I started using my first real chef knife after grad school. It was a Victorinox Fibrox 8-inch chef knife. I still have it and it is a great knife. My primary chef's knife is a ZWILLING J.A. Henckels Five-Star 8-Inch chef knife, received as a wedding present (thanks Emily!). I've used it for nearly five years and it's still in great condition. I have been using whetstones to manually sharpen this particular knife, along with my other frequently used knives (paring, petty, santoku, etc.) for some time now.

I only recently had the epiphany that the relaxing sharpening process I go through with my own knives could be done for others, with the added benefit of getting paid for it!
